I am so excited that today is Cinco de Mayo for two reasons:
- I LOVE TACOS!!!!
- It’s my Birfday!
So in honor of Cinco de Mayo, I wanted to do a recipe roundup of some of my favorites from Fork My Life. Some of them are really traditional like my Chipotle Chicken Tacos and others are more off the beaten path like my Avocado Toast. I hope you whip up one of these recipes and celebrate the best day of the year!
This one is an older recipe from FML, but a classic nonetheless. It’s a great one-pot dish of tortillas, black beans, poached chicken, cheese and veggies. It’s a perfect make ahead dish and freezes really well in case you have leftovers.
A great alternative to serving guacamole and chips. The avocado toast is topped with creamy avocado, grapefruit segments, parsley and sliced chiles. Served on crusty multi-grain toast and ideal for breakfast, lunch or dinner.
A healthy dish of roasted poblano peppers stuffed with scallions, zucchini, mushrooms and red bell peppers. Topped with a creamy tomato sauce and gooey cheese. And it’s vegetarian!
A combination of ground chicken, white beans and veggies in a rich and spicy green chile broth. Topped with avocado, scallions, queso fresco and sour cream. This shit is addictive.
Smoky, shredded chicken breasts nestled in corn tortillas with scallions and avocado. Throw some crema on there too. Did I mention it’s quick and easy too?
Another vegetarian alternative to your average chili. This thing is jam packed with peppers, onions, corn and three kinds of beans. Top it with anything your heart desires and serve with hot sauce!
